My Favorite Cheeses

            To say that I am a fan of cheese is an understatement. I greatly enjoy cheese and the depth it can bring to flavors in cooking. I feel adding cheese to any dish can only make it better. Of course selecting the right type of cheese and using the right amount is very important. I find it interesting to explore the varieties of cheese and different ways to use them in cooking. Still, I have my favorites; actually I have a list of my favorites. Here goes:

1.     Nacho
2.     Pepper Jack
3.     Feta
4.     Mozzarella
5.     Parmesan

Each of these cheeses is on the favorite list for a different reason. I love spicy foods, so I appreciate the heat nacho and pepper jack cheeses bring to foods. Nacho cheese is also a delicious dip and a flavorful garnish. Feta cheese has a complex salty and savory feel that is great in dishes from salads to pizza. Mozzarella is a great cheese for cooking and there are so many ways to use it. Parmesan cheese is more than just something to sprinkle on top of spaghetti. I like to mix it with other cheeses and use in a cooking blend. It is dimensional and slightly salty. I guess you could say I’ve thought a lot about cheese.
